The buyer claims that the watch i sold to him isn't as described. I sent him photos on a gmail as all the details of the watch.
He doesn't like and it it is okey, i will make him the refund but how can i be sure that he is going to send me back the same watch with all the original parts. The question is, can i wait to receive the watch and check it, and after that to make him refund?

Yes of course, even if he filed a dispute paypal would expect him to send the item back to you trackable (to prove delivery) before you have to refund.

if he removes some parts of your watch,and tracking shows it has been delivered,Ebay expects yu to refund in 3 days.

You can't be sure. There is no way to be sure of what he will do; it is very high risk to sell an expensive watch. He could send bad parts and you could loose all. PayPal can't protect you from a dishonest return. You will not be able to prove anything to PayPal.
Where are you located? Where is buyer located?
My suggestion would be to communicate with the buyer what the real problem is and then make a sure deal. Would he keep the watch for half price refund?

You can't be sure he will return all the parts; there will be tracking to show return and tha'ts what PayPal want to see. If the return if forced through PayPal, then PayPal will refund.
You would then have to appeal and explain that the returned item was not the same; it would be your word agains that of the buyer. PayPal doesn't observe either end of the deal. That's a big risk for online selling.
That's also a good reason to accept a negotiated deal with a buyer that doesn't involve return; It's important for busness to select the option with the least cost to the business.

Escalate the dispute to a claim BUT before you do so put as much evidence about the watch you sent into the item description to prove it was as described before you escalate.
Paypal may or may not find in your favour but if they don't he will have to return it.
As to what he returns if it is not the same one etc then cross that bridge when you come to it.
