How can I obtain documented proof that seller received refund?

I am at my wits' end with a nearly $3000 transaction that's been disputed since January.

The long and short of it is this:

Dispute was ruled in seller's favor.

Outside of PayPal, seller agreed to refund me when they received the payment. (custom order they made wrong TWICE).

They are now saying they never received payment.

PayPal customer service agent stated via phone that payment was sent to seller.

Taking seller to court and I need documentation that they received the payment from the dispute.

How can I obtain this documentation?

I see you're looking to get a proof of the payment sent to the seller as a document. Any details of the transaction can be available in the activity page of your PayPal account. You can obtain the screenshot reflecting the details of the transaction which works as a proof that you sent the payment successfully to the seller.
