Changing an email address changes that email address to another OR you can have up to 8 email addresses on the 1 paypal account.

Your username is your legal name and of course that does not change !!

What are you trying to do?

Add another email address?

Change your primary email address but keep it on your account?

Change your primary email address to another one and then remove it as it no longer exists?

Change your paypal.me link?

Nothing I just want to know which email I will use to login to PayPal

Normally its the one you have selected as your primary email address in your paypal profile.

The PayPal account will be disconnected from the eshops and applications I added it if I change the primary email?

Hi everyone! Thank you @kernowlass for your help on this thread so far. Your time and experience is always appreciated. 

@angaratosurion, welcome to the Community Forum! Most eShops or applications that bill monthly on your PayPal account have a billing agreement setup with your PayPal profile. With that in mind, if you have changed or removed your primary email, you should not have to reset any of those billing agreements back up. However, anyone who would like to send you money should have your new email address if you've removed the old email.
