WHY did paypal remove the names of the companies I pay money to?

All that shows in my activity is Ebay Commerce. Same is true for my notices.

WHY hide this information from me?

I understand your concern about not seeing merchant information in the PayPal activity. If you paid using PayPal in eBay, the charge may appear on your PayPal and card statement as "eBay Commerce". You have to contact the eBay support team to know the details of the merchant.
