It sounds like these transactions could be made using a guest account via PayPal using your debit card. It may not remain registered in your PayPal account because it was not identified by your email address and the corresponding password before the payment was completed.
The next time you make a payment, I recommend you enter your email address and PayPal password by simply clicking Pay with PayPal and logging into your PayPal account, rather than entering your debit card information. This way, your payments remain registered on your PayPal account and you can check your transactions under Activity.
