I’m in the UK and am considering purchasing something in Italy for £1200.00. So roughly how much would I actually be paying after fees and conversion to Euro? Thank you.

Buyers don't pay fees, sellers do.
However dependent on how you 'fund' the payment to the seller and the currency you select the amount you pay would depend on the currency conversion rate on the day you paid.
Advice is voluntary.
