Help! Sold iPhone through Paypal a month ago... buyer reversed payment through unauthorised access!

I am actually reeling - any advice welcome!
I posted a listing through eBay last month selling an iPhone 7. I was approached by a buyer who requested to pay directly through paypal, and did.
I sent the phone on the same day the funds cleared through special delivery guarrunteed - yes I have proof of postage and a signature at the buyers delivery office which infuriates me further!
I have photo and video evidence of the item, the item being packaged and proof of postage - thank god I did!
I recieved an email today from paypal telling me that the buyer had reversed the payment and that I needed to supply evidence which I have.
Paypal have taken the amount i sold the phone for from my account.
Can somebody please explain what my next steps are, and more importantly how on earth this can happen! I am so disgusted and dissapointed.
