Orders placed using out-of-date data

We have had two Paypal transactions over the past 6 months that have both drawn on outdated costs. We cannot understand how this is happening since it is both the product costs (set within our website) and postage costs (set within Paypal) shown in these orders are outdated: our website and Paypal had both been overwritten with new data prior to these orders being placed.
Has anyone any ideas about how orders using non-existant data could happen?

Some thoughts, if you item button code is not stored on PayPal's servers, it's possible that a cached web page and the associated cookies from a previous visit could be the cause.
