Deduct postage option missing

Sold an item on ebay which had £3.45 standard postage added (try to change it and see how far you get - tore my hair out). Anyhow, I wrote in the description for buyers to contact me but the buyer has paid through but (understandably) wants tracked, signed for, insured. I don't mind coughing up the extra, but Paypal has already taken the £3.45 out. If I press "print label" I assume I'll get inadequate, standard post, correct? The FAQ bot suggested I click on the option to decline the postage (can be done within 7 days) but the option isn't there!
How do I satisfy the customer's wish without being even more out of pocket? I don't mind putting a couple of pounds towards the insurance etc but I don't want a useless, standard 1st class label and having to go to the PO and stump up for the whole lot. Where does this "delete" option appear? Is it safe to click on "print label" and make adjustments or does that automatically mean I've accepted and paid for standard postage?
Any quick answer would be helpful; I'd like to send to him tomorrow. Thanks

Ah. ebay's postage tips suggest that I can choose the type of delivery service, print off and take to the PO. Is this my best way of doing it - from ebay's selling page, not the Paypal site?
