Why do fees differ for a similar receipt amount? (e.g. a £10 payment to our account can attract a fee from 54p to 74p). We do receive payments from around the world but I would have thought there would have been a set fee levied for any credit received for the same amount.

You pay more for international transactions and that varies country to country.
