Just tonight, someone logged into my paypal account and changed my primary email address to [Removed] which makes me unable to update my primary email myself. I guess whoever did this did not change my password so I was able to log in and turn on 2-step authenticator and changed my PW so hopefully that is now keeping them at bay. How do I change my email back to my original? And why aren't there answers about this readily available? Seems like a common thing.

There are answers available, you just click HELP top of screen and put in change email address.
Go and click on the profile tab (icon next to log out) > click on the + and add another/new email address first > verify it > go back and click on update and tick the box underneath that says make primary > then you should get the remove option by the old now no longer primary email. You can remove that one or leave it on as you can have up to 8 email addresses on the one paypal account.
Advice is voluntary.
Kudos / Solution appreciated.
