Being new to e-bay, I immediately jumped right in and purchased about 7 rings from the same seller over a 5 day period spending about $107. The shipping fee was high, but being trusting, I felt I was getting a good deal. The seller has not responded to my e-mails and I'm worried about going thru so many e-bay protection claims. What do I do?

How long ago did you buy these items and was the seller located stateside or was he/she from overseas? The fact that you bought it on eBay just increases your chances of getting your money back without needing to file a chargeback.

email the seller and ask for a Delivery Confirmation number.
If they don't respond, file an "Item not received" claim here;
http://feedback.ebay.com/ws/eBayISAPI.dll?ResolutionCenter&cf=20
You will have to escalate the dispute to a claim within 20 days to get a refund, and I would give the seller 15 of those days to ship the items.
IF the rings arrive and they're not what the seller described, you can phone ebay and get the dispute switched to a "Not as described" dispute.
DO NOT, under any conditions, close the claim until you have a satisfactory product or a refund. Some sellers will promise anything or say anything to get you to close a claim because, once closed, it cannot be re-opened.
A separate dispute will be needed for each invoice that you paid.
