I was going to buy a virtual item from a guy, but whenever I tried to pay him it would put the funds on hold so we decided to do increments of $50.00.
it was 3 50's and a 10. So 4 payments total.
What are the odds that I'll get all my money back? slim?

If you paid as goods/services then file disutes of item not received.
If yo paid a family/friends, then they wre gifts given.

It was goods and services, but do you think that I will actually win the case? it was for a virtual item and he can fake evidence so easily.

You won't know until you try.
Just be aware that PayPal does not like disputes.
So, if you have only 4 transactions for purchases and you file 3 separate dipsutes it will look really bad for your account. PayPal User Agreement lists disputes as restricted activities. When your tranasctions and disputes place too much risk on PayPal you can suddenly have your account closed.
So, make sure you only engage in accounts which will not require disputes.
