Is my address retained indefinitely by the seller?

Do sellers retain private information after completing transactions? Purchased a digital product online, and while there technically is no need for a shipping address, the seller requested for one and by default my actual home address and name was provided. By the time I realized it was too late and the transaction went through. My question is, how does the transaction appear for the seller in this case? I assume my address would be visible to the seller even though they don't need it, and they would be able to retain that information for an unlimited amount of time if they so please? Or would the information be withdrawn once the payment successfully goes through and the seller verifies or completes the transaction on their end? Would this all be done manually or through a payment gateway which protects and limits the information to the seller?
