Made a payment arrangement with buyer, now they have disappeared

I doubt there is anything I can do here because the transaction was not through Ebay, but I'm taking a chance and seeing if I have a case for dispute.
I made a private arrangement with a buyer to sell them a fairly high priced item. I had a strict due date, with the full disclosure that all payments are non refundable, and that the sale is final. Things were going ok, payments were being made on time (I allowed this person to stretch out their payments over a period of 4 months, which I think is pretty generous). Their last payment was due days ago, and I have not had any contact with the buyer. Not an email, nothing. I have sent 3 billing statements, one the week before their final payment was due, one the day after their due date had passed, and one recently telling them to please pay today before I look into filing a dispute. Nothing, no response.
Now I still have the item which is fine. But I would not have agreed to a payment plan if I thought the payments would be late (or who knows, they may never pay), with no contact from the buyer. I'm not a store doing a layaway plan, I'm a seller depending on that money to be prompt in return for payment flexibility. I know. My own stupid fault.
Where do I go from here? I'm not just going to wait forever for them to pay me. I'm certainly not refunding any portion of what they have paid already. At what point can I cancel the transaction and say "Sorry, your loss."? Will Paypal protect me as a seller in this case? Be kind, just looking for some sort of advice so I can put this behind me, just yet more dumb holiday stress.
