I need to receive a payment from an customer in USA (I am UK individual business account) for $679 with a value of £515. Can't find any cohesive info on all the types of fees... How much do I need to ask the customer to pay to cover all the fees and ensure I end up with £515 (job is a gift, cant afford any loss).

Its against paypal rules to surcharge your buyer your fees.
If you do then you risk your paypal account being permanently limited.
Advice is voluntary.
Kudos / Solution appreciated.
