How Do I Tell Paid from Unpaid Customers?

I want to set up my web site so that I can keep track of who has paid and who had not paid.
I want to know if anyone here has used paypal or any other online payment system in their website to do this. I want to know how you can sell subscriptions to paid areas on a web site. I mean, I know how to set up a paypal button for subscriptions. That is the easy part. The trick is to seperate the paid customers from the unpaid customers when someone returns to the website. What is the means by which you can tell the difference between paid subscribers and unpaid visitors? Is it some hidden identification? Is it internet cookies?
A blog can be setup such that there are required fields that the user has to put in (a username, an email address) and I guess that clicking on a subscription button could be a required field. But how do I determine if the user has clicked on a button and actually gone through the process of paying?
