How does Paypal protect us sellers against Con Artists?

I have sold online for years and used Paypal for years but this is a new experience. I closed my scrapbooking store and have a buyer in Texas who wants to purchase all of my remaining inventory. She agreed to pay $300 plus shipping every week or two. So I sent her a money request for one of those purchases for $333, She paid and I shipped the items. She sent an email that the items were received and she loved everything. She was so happy that she purchased another lot right away but this time sent me a money order because of some problem she was having with Paypal. I shipped those items too but then after that Paypal took the money out of my account for the other lot that had shipped the week before saying that it was an unauthorized transaction and that the buyer had filed that with her bank. I have probably hundreds of emails now back and forth with the buyer where she is telling me that Paypal is messed up and was trying to charge her account double. Paypal is telling me that they have not done that and that the buyer is the one who disputed the transaction...and so on and so on... I did a delivery confirmation on the packages to her but did not know that the package should have been signed for in order to receive seller protection. This is the first time this has happened to me. I was introduced to this lady through another customer and she is telling me she has now had problems with this same person so I think this other lady must be some sort of con artist. How do we fight as sellers against these cons?
