Good day,
I understand the concerns of a Craigslist web sale, I also understand that Craigslist is supposed to be for in-person sales. I'm currently working with someone to determine if this is a legit sale for a GoPro of mine. That being said, the individual would like to PayPal me the money and have it shipped... what are my options for if there is a dispute? If I send the item with a signature required and someone signs for it, does it rid me of any liability to have to return that individuals money?
The plan was to get payment, withdraw / transfer to my bank. Once it clears - I will ship the item.

If there is a problem with the item the buyer has the right to dispute the purchase towards PayPal. PayPal could honor that dispute. It doesn’t matter if the money goes into your bank account or not, PayPal is linked to that account and could refund the money for the item by using that account. Hopefully, there isn’t a refund required during this transaction. Here’s what I’d do: I would go to the drugstore, get a prepaid Visa card, list it as a payment option and have the person send the money to that visa prepaid card.
