So here's the deal. O sold a gift card that was email to the buyer. Is there a way to show it was sent so PayPal can release the funds faster? I've contacted the buyer about leaving me feedback and haven't heard back yet.

This was a high risk sale and you have no proof of delivery, so it is unlikely that the hold will be released early.  PayPal holds the funds in case of a likely dispute of non-delivery by buyer.
