How do you update a total after the transaction has been paid?

I sell through Etsy and would like to offer some different options for a fee.  If they have already paid for the item and basic shipping, how do I send an updated invoice to reflect the additional fee?

Etsy has a tutorial for sending another PayPal invoice that should work in this situation.

This isn't sending a new updated Etsy invoice but it should still work.  I wasn't able to find anything on Etsy that allows an Etsy invoice to be updated and resent.
