The closest button to what you are looking for is 'Automatic billing'
This will sign customers up for a billing agreement that allows you to charge them a variable amount – up to a mutually agreed upon maximum - each billing cycle. For example, utility bills.
There is nothing that they can decide the amount other than the donation button but this will allow you to decide the variable amount.
