If a bid is a contract, why isn't a sale a contract?

A seller listed three Tokidoki Barbie dolls for last week's prices yesterday. The market value of this doll has tripled in the past week. This same seller sold 9 of these dolls last week at a little above retail value and re- listed three more dolls at the same retail value before he/she realized the market value had tripled. Myself and another buyer purchased these dolls using buy it now and paid immediately with paypal. An hour later, AFTER realizing the dolls were underpriced, the seller issued a refund and cancelled the sale. I understand the seller not wanting to take a loss on the item; however, if I bid on an item and later change my mind I am obligated to purchase it. Why isn't a seller obligated to honor a listing? No wonder ebay has earned the reputation of being a fraudelent marketplace. It seems like you can't get any help from ebay or paypal (who charge enormous fees for their services) in a free reign -- I make the rules as I go along -- marketplace.
