So I’m selling some shoes on eBay and someone wants to buy,but I don’t know if I should trust only because he wants me to purchase an eBay gift card and show proof of tracking number before funds get released

Trust your instincts, when selling you should never have to purchase any gift card.

Once you receive confirmation of payment (in this instance through your eBay account, not email), you can ship out the product to your customer.

And you can use either eBay's or PayPal shipping labels for shipping and provide tracking to your customer.
