Yes - you can do that.
As you can have up to 8 email addresses linked and confirmed, technically, you could have 8 different websites - a unique email for each web site. This also helps you track which site the order came from. What you need to consider is your Business Name - if the name is generic, like "Acme Enterprises", it does not tie you down to a specific product. For example you have two sites, one sells shoes and the other sells books - if your Business name is "John's Shoes" - then anyone who buys books will see "John's Shoes" which may cause some confusion.
