Processing large overseas credit card payments

I've received an $8,000 order from the Solomon Islands and the customer wants to pay via credit card. Is it safe to use paypal checkout for that?
If the customer decides to dispute the order with paypal do we have a chance to defend ourselves? If we accept the order we would ship the merchandise with traceable courier service.
