Why do ordinary payments become subscriptions?

I just reviewed my PayPal subscriptions and found many from ordinary retailers like Zappos and Orvis. I only used PayPal to buy single items from them, but it appears that these companies told(?) Paypal that I was buying a subscription. Thus, they could simply bill me for stuff any time in the future and I wouldn't even know about it.
How does this happen? When I use Paypal, how can I tell that the company is starting a subscriptio?
