If the sender chargebacks through their bank from a friends and family transaction (since paypal doesn't protect this transaction), am I responsible for paying back the money sent to me?

It will be automatic. PayPal doesn't give youprotection for unauthorized charges by someone not authorized to use the sender's PayPal acocunt.

Sorry still a little confused. If the person who sent the money through friends and family, and they dispute/go to their bank for a refund, will paypal deduct the money from my account that they sent me?

if you lose the chargeback and with unauthorised transaction, sellers will lose, there is a chargeback fee of $20 to pay,
PAYPAL has way to determine if it is unauthorised or not,so does Ebay.
