Virtual Terminal Taxable/Non Taxable Amount

I am using Virtual Terminal to process phone orders (Limo Reservations).
The problems is that some of the amount charged is taxable under CT State sales tax and some is not (optional gratuities are not taxable) but I don't see a way to enter a tax amount (just a percentage).
There is a 'shipping' that can be designated as non-taxable that I could put the tip in because there is no shipping charges for limo's, the the receipt would confuse customers,
Basically I want to enter a sales amount and a taxable amount or allow me to enter the tax as an amount and I can calulate it myself.
Is there a way to handle this in virtual terminal?
Right now I am marking the entire sale as non-taxable and tracking taxes separately and manually editing the receipt to show the taxes. (very time consuming).
