Unfortunately PayPal's built in inventory feature only manges 1 item at a time, there are no additional options or features to do what you have in mind. There's basically two options, the first would be to find a 3rd party shopping cart that has the features you need. Many carts use a backend database for inventory management. Second option would be to build you your own cart (if you're into coding your own stuff) or hire a developer to build you a custom cart.
