They don't need your email address to process a refund, they just click on the transaction in their paypal account and hit refund.
You would then get an email from paypal to say that a refund had been issued. Once it showed as completed in your paypal account it would be on its way back to your funding source linked to your paypal account that you used to fund the original payment.
Bit confused as you said the dispute was rules in favour of the seller???

If you lost the dispute then there is no incentive for the seller to refund you.
If they had refunded you then you would have received a paypal email stating you had been issued a refund + the activity would show in your paypal account overview page.
