Guy came to my house collected parcel. So I don’t have a tracking number to give to PayPal to get my payment off hold? How can I speed up the process

It should be on the carrier's web site. Check there and see if you need to create an account, etc.

I sold an Xbox off Facebook to a guy. He then came to mine and collected it. So there’s nothing I can do? He tried to get the message centre to do something at his end by saying he’s received the goods. Paypals a shambles

Personally I think you should never use Paypal for an item that is to be collected or personally delivered as you have 0 seller protection.

Your buyer can collect the item and then file a dispute for non receipt of item. As you would have no tracking number to prove delivery of the item to him then you 'may' lose the dispute.

As for the release of funds as you didn't use cash on collection then with payments received for tangible goods Paypal would request valid tracking information confirming the item has been delivered to the buyer. They can validate the tracking information online, so once it is delivered they can release the funds. IF you have received the funds for a service / virtual or digital sale or no tracking number is applicable Paypal would be unable to release the funds any sooner than 21 days.

However If you mark the transaction as processed then the buyer or sender may have the option on their account to mark the transaction as delivery/satisfied. If the buyer or sender confirms this by clicking on the "Confirm Receipt" button, funds may be released sooner ie 7 days after the buyer or sender verifies receipt. This is not always available or guaranteed. 
If not then sadly its 21 days.

What carrier? The BUYER collected the item if you read the O.P's post.

Ah, I thought he meant the guy from the delivery service came and got the goods--not the buyer.
