I'm selling my child's motocross bike & the buyer has paid me £2500 in my PayPal account by a credit card. I just want to know if I'm safe to now give them the bike, as I don't want them to somehow get the money back, as they are collecting it I won't have any proof giving it to them.

There is NO PAYPAL SELLER PROTECTION for any type of motor vehicle.
There is NO PAYPAL SELLER PROTECTION for items that are collected.
I would refund the paypal payment and ask for cash on collection.
