How can I set the invoice due date to a specific date using the new invoice interface?

I copy invoices to a customer, change the fields needed, but the invoice due date stays the same using the new interface.

I also sometimes invoice with a due date a week or two later than the invoice date.

How can I do either of these using the new system?
