Question about invoice and payment options

Two Issues:

1) I need a way to personalize the invoice. 

Can this be done?  My invoice needs to include the recipient's name and contact information (which is not always the same name as the buyer).  How do I do this please??

2) The invoice amount is variable. 

I would like them to be able to write in the amount that they are paying for the service. For example:  Service is provided for $100, but they are permitted to make partial payments.  Is this option available?

My clients will need to enter a lot of variables:

Name

Address

City, State, Zip

Invoice #

Amount

Please someone help us out!
