You can change what appears on the top of the page by changing your account type to a Business account. That would make the business name you set for your account be what appears at the top of the page. You can also set a header image in the Custom Payment Pages area of your account or the "cpp_header_ image" variable in your button code.

Are you currently using Express Checkout or Payments Standard? Payments Standard are the buttons created through a PayPal account and do have a "BRANDNAME" variable. If you're using a third party shopping cart you'll need to go through the options the cart gives you to find out if you're using Express Checkout and if you can set the the "BRANDNAME" variable. Modifying a SetExpressCheckout API call requires some development experience and it isn't something easy to do without having access to the scripts your site is using to create the SetExpressCheckout call. Are you working with a developer? They should be able to get it added.

You can create Invoices through your PayPal account. The receiver of the invoice would get an e-mail asking to pay you. With an invoice you can define specific item information to be purchased. There is also the Request Money option.
