Receiving payments in only one currency

Now I have balances in different currencies.. what I'd need to do is be able to receive payments only in one currency (euro). 

So whenever a client pays in CAD or USD, I get the right amount (that I'm charging) in Euro on my Euro balance.

How would I do this?
