Managing Cancelled Subscriptions

Someone who sets up a recurring payment to a merchant on Paypal can easily cancel it through his account. The merchant gets an email that this has been done. How do you deal with this? OK, you can contact them to ask them why. But ultimately you have to stop them from using the service. Do you automate this by checking for the subscription in your code (if so how?), or do you simply delete the customer from the database on your server?
