Subscriptions that pass variables to and from Paypal

Hi!
I want more control over the buttons than I currently get with the button maker. I'm good at HTML and PHP so I'm fine with doing forms, passing variables and stuff and want to be able to do the following:
I need a generic subscription form that I can pass the following information to:
What is being bought
By Whom (a database identifier for the member)
Other data about their profile id (from the database), their page/pages (id from the database)
As you'll see, these things will change, but I want users to pass paypal this information so that when they pay, these variables get passed back automatically to my webserver for processing and activation of whatever they bought.
I'm sure it's possible, but I don't know how.
