Postage - multiple items, one charge?

1. How can I set up my site so that customers can order multiple items but only pay for one set of postage?

2. Also, is it possible to set it up so that customers can choose between two different postage options? I want to be able to offer either Royal Mail or, at a higher price, courier.

I'd like to know how to do this as well.

And can you only charge a fixed postage rate for people who purchase through my website as opposed to people who buy things from me through ebay?
