Terms and conditions are if selling goods the friends and family option shouldn’t be used but this is what many sites/pages on social media suggest should be used, specifically to reduce chargebacks/refunds meaning losing what’s been sold and, the money received - what is the best way to avoid this from happening using the ‘goods and services’ option? What evidence would be needed to fight a chargeback/refund if it arose? Many thanks

That depends on many factors all listed in Paypals seller protection policy for you to read so you can risk assess your transactions.
Legal (bottom right of Paypals pages) > user agreement > seller protection.
Advice is voluntary.
