If I buy a custom product that takes 7 months to make, will PayPal change the deadline to dispute based on the expected shipping date, or would I still only have 180 days?

180 days only + you have 0 buyer protection for custom made items unfortunately.
Advice is voluntary.

PayPal doesn't offer protection on custom items if they aren't as described, but they do offer it if it never arrives.
