Payment API missing Payee object

Hi,
Based in the UK, running in Sandbox mode, using a Business account.
A month ago when I started integrating PayPal, the Payment API returned the Payee object. Today, it doesn't. I checked the Payment API docs also and I could swear it's changed. Executing an approved payment used to return the Payee object (transactions[0]->payee); but now it seems only making the "Update Payment" call returns the Payee object.
Further, when using Google Chrome, it's hit and miss which Checkout format it loads. Sometimes it uses the Classic appearance - and sometimes it uses the newer format. This means that sometimes it returns the Payee object and sometimes it doesn't.
Essentially, I'm building a centralised Order Management System that will deal with 10 Merchant accounts and I need to be able to track the payments to the right merchant account for accounting purposes.
Any advice would be much appreciated.
