i’ve recently been selling a load of my old stuff on ebay i’ve sent it away and there demanding refunds saying it hasn’t arrived when i know fine we’ll ive sent them away and i’m my account is now in debt and not willing to pay off £800 for scammers

In the event of an item not received dispute the ONLY way paypal can tell whether the buyer received the item or not is by viewing the tracking number supplied by the seller.
If you choose to send the item without tracking thats fine but its at your own risk and not the buyers as you would lose any INR dispute.
And if you don't have tracking how do you know that they are scammers?
Items do get lost in the post and I guess you would want a refund if an item you ordered didn't arrive wouldn't you?
Advice is voluntary.
