What do we have to do when the seller tells us that the item is no longer in stock and we have had a message from Paypal that the item is about to be paid for.

Ask the seller to issue a refund. If you use pay after delivery then the funds will still leave your bank account but will be credited to your paypal balance if a refund has been issued.
Advice is voluntary.
