I want to cancel a payment I made today of 500$ but I cant find a way to cancel it, it's not showing up to do so in either summary or activity

Normally you can only cancel if its been sent to a non existent email address and shows up as pending / unclaimed.

If it shows as completed then contact the seller and request them to cancel your order and issue a refund.
