Hello, I have recently received a payment that was intended to be a gift/donation for a small friendly tournament organization. However the transaction includes a shipping address, while no products/services are provided in return. How can I be sure this payment will not be refunded at any time claiming they have not received a product/service?

You cannot be sure. Its just how the person decided to make payment, to include shipping address instead of indicating "No address needed". You can issue a refund and be done with it.
If you want to be sure no one does this again, make a PayPal button to put on your website or an email url and in step 3, you can elect not to let the sender add a shipping address:

You can make the price 0.00 so donors can enter any amount.
