Attach name of customer to sale when cc card is different than end user or cc card manually entered.

Can I track sales by the name of the end user customer vs the name on the credit card used? And if manually enter credit card number, how do I attach the customers name to this sale as well?
The reason for this is we have sales people who will take cash on a sale from a customer and then the sales person pays us with their personal credit card as they work remotely and transferring cash is not viable. However, we need to know the name of their customer for tracking purposes.
The same thing applies when manually entering a card and the purchasers name does not display on the PayPal reporting.
I know we can store customer information in the vault, but it doesn't seem to help on the first sale?
