"Sold Out" but still putting item in cart

I am very confused. I don't want the customer to be able to order a sold out item. A friend in the computer field suggested I put the redirect URL back to my home page in the PayPal button for the item. When I ran a test, and clicked on the item with nothing listed in stock, it still put the item in the cart. What can I do? Is there a step I am missing here? Or do I have to do something else on my website itself besides what I put in the PayPal button?
