Hosted Buttons have changed. How can I now edit the item ID and stock?

I have a whole set of hosted buttons on PayPal which I previously used to have buy buttons on my website.  The button was hosted at PayPal and my form has the "hosted_button_id" value.  At PayPal I could define the stock levels and the item ID.  These options have disappeared on the new layout.  How do I put in my stock level and item ID?

So "technical support" are saying they have just removed the functionality.  How bizarre.

Please can someone recommend another provider that supplies this?
